Gourmet Chicken Casserole Recipe

Today I have a cheap and easy Aldi recipe to share with you!  My mom used to make this a lot when I was younger and it is now a favorite in our household with my husband and kids.  This Gourmet Chicken Casserole is affordable and satisfying.  It’s a great recipe for a comforting Sunday evening dinner and is a great option when you want to feed a crowd because it is easily scalable and costs about $1 per serving.

Gourmet Chicken Casserole Ingredients and Cost Analysis

  • 6 pieces boneless, skinless chicken breasts (about 2 lbs worth) $4.00
  • 6 slices cheddar cheese $0.98
  • 1 box stuffing mix, any flavor (I like to use cornbread) $0.69
  • 1 can cream of mushroom soup, 10.5 oz size $0.50
  • 1/2 cup milk $0.10
  • 2 tbsp mayonnaise $0.05
Total cost: $6.32 for 6 servings About $1.05 per serving! *Prices are based on buying the ingredients from Aldi.
Gourmet Chicken Casserole Preparation

This is an easy recipe to make. It takes less than 10 minutes to prepare it and just 35 – 40 minutes to bake it.

Full instructions for making the casserole are below in the recipe card but it is as simple as placing the pieces of chicken breast in a casserole dish, placing a slice of cheese on top of each piece of chicken, mixing the remaining ingredients together to make the stuffing, and spooning some on top of each of the cheese covered chicken breasts.  Easy peasy! 🙂

This is a quick and easy cassserole that is satisfying and affordable to make. My mom used to make it all the time when I was younger. It's a good meal when you want to feed a crowd on a budget because it's easily scalable.

Ingredients

  • 6 boneless chicken breasts I used 2 lbs of chicken breasts. It was 3 breasts which I cut into 2 pieces each.
  • 6 slices cheddar cheese
  • 1 box stuffing mix (like Stovetop) You can use any flavor stuffing mix. We prefer the cornbread.
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 2 tbsp mayonaisse

Instructions

  • Preheat oven to 350 degrees
  • Place chicken breast pieces in a 9 X 13 casserole dish
  • Place a slice of the cheddar cheese on top of each piece of chicken
  • In a bowl, mix together the stuffing mix, soup, milk and mayonaisse until it is well combined
  • Evenly spoon the stuffing mixture on top of the pieces of chicken
  • Cover the casserole dishe with foil and place in the oven
  • Bake for 35-45 minutes. Cook time will vary based on the size and thickness of your chicken breasts.

Notes

Serving suggestions:
Serve with a tossed salad or some steamed or sautéed veggies.  We like it with green beans or asparagus.

Cheap and Easy Aldi Buffalo Chicken Sandwiches

Today I have another Aldi recipe for you!  This is a favorite of ours that we’ve been making for years.  I love it because it’s super easy and very cheap to make.  It also leaves us with leftovers which I usually repurpose into buffalo chicken nachos later in the week!

This slow cooker Aldi recipe requires just 4 ingredients to make (5 if you count the buns or rolls you put the chicken on!).  There is hot sauce in it so it has a little kick to it but is not overly spicy.  My boys have been eating it without complaints since they were quite little!

  • 1 packet Ranch Dressing Mix $0.43

Total Cost: $5.97 (feeds 8 or 4 with leftovers!)

Buffalo Chicken Sandwiches

An easy slow cooker recipe for Buffalo Chicken Sandwiches. Uses 5 ingredients from Aldi and costs just $6 to make!

Ingredients

  • 2 lbs boneless chicken breasts
  • 1 cup hot sauce
  • 1/2 stick butter
  • 1 packet ranch dressing mix
  • 1 package hamburger buns

Instructions

  • Put the chicken breasts in the slow cooker
  • Pour ranch dressing mix on top
  • Add the hot sauce
  • Cook on the low setting for 7 hours
  • Shred the chicken and put back in the slow cooker
  • Add the butter, stir, and cook for another hour
  • Serve on the buns

Notes

*This shredded buffalo chicken is good on buns, rolls, hoagies, etc.  
**We like to eat the leftover shredded buffalo chicken on top of tortilla chips with some homemade queso sauce.  It makes amazing nachos!

Meatball Sub Casserole Recipe

This easy and delicious Meatball Sub Casserole recipe is guaranteed to be a hit with the whole family!  It combines all the goodness of a meatball sub in the form of an easy to eat casserole.

With just 5 ingredients, this recipe is not only extremely easy to make, but also very affordable.  As written, it can feed a family of 4-5 for $6.42 (priced with ingredients from Aldi).  

Have a big family or expecting company?  It’s easy to double it and feed a crowd!

Easy 5 Ingredient Recipe

Here’s the price breakdown for the recipe if you buy the ingredients at Aldi:

1/2 bag frozen Italian style meatballs $2.15

1- 24 ounce jar of pasta sauce $0.85

1-10 ounce loaf of fresh garlic bread (found in the bakery area of Aldi) $2.09

1 cup of shredded Italian style cheese $1.00

1/4 cup of shredded Parmesan cheese $0.33

Meatball Sub Casserole

This easy and inexpensive recipe uses frozen meatballs, garlic bread, pasta sauce, and shredded cheese to create a delicious meal the whole family will love!

Ingredients

  • 1 loaf fresh garlic bread
  • 1 24 oz jar pasta sauce
  • 1/2 32 oz bag frozen Italian meatballs (32 meatballs0
  • 1 cup shredded Italian blend cheese
  • 1/4 cup shredded Parmesan cheese

Instructions

  • Preheat oven to 425 degrees
  • Place the garlic bread on a baking sheet with the spread facing up and bake for 5-7 minutes (or whatever time is recommended for the garlic bread you use)
  • While the garlic bread is baking, heat the pasta sauce and meatballs until the meatballs have thawed.
  • Set the oven to 350 degrees after the garlic bread comes out. Allow garlic bread to cool some and then cut it into squares.
  • Lay garlic bread pieces into a 2 quart casserole dish.
  • Spread meatball and pasta sauce mix over the top of the garlic bread.
  • Sprinkle the shredded cheeses over the top of the casserole.
  • Bake for 15 to 20 minutes.
