Aldi Meal Plan for 2 – Week of June 28th

Weekly Aldi Meal Plan for 2

My kids are visiting their grandparents in Arizona for part of the summer so my meal prep has been cut in half for several weeks as it’s just me and hubby!

Since we have been trying to watch what we eat, I’ve been keeping it simple when it comes to our dinners.  

Here is what is on our meal plan for this week:

Breakfast Options

  • Oatmeal with blueberries
  • Whole wheat toast (with cinnamon/sugar or peanut butter)
  • Eggs
  • Greek yogurt
  • Strawberries
  • Bananas

Lunch Options

  • Meat and cheese sandwiches (on whole wheat bread)
  • Tuna salad with crackers
  • Leftovers
  • Potato salad
  • Refried beans 
  • Rice
  • Watermelon
  • Spinach
  • Peaches (they were $0.69/lb this week at Aldi!)

Dinners

  • Country ribs, corn on the cob, pork and beans, watermelon
  • Shrimp tacos, refried beans, rice, watermelon
  • Boneless chicken thighs (grilled with BBQ sauce), baked potatoes, grilled peaches, asparagus
  • Leftover chicken, Cole slaw, watermelon, corn on the cob
  • Jalapeño cheese sausage links in hot dog buns, tater tots, watermelon, Cole slaw
  • Leftovers night
  • Eating out or freezer pizza night (we plan to go out to eat once a week but I also keep a pizza in the freezer in case we don’t feeling like going out.  It’s also a good back up meal if something goes wrong and I don’t have time to make the dinner I planned for one day!)

Aldi Friendly Meal Plan for 4 – Week of March 1st

This Aldi Friendly Meal Plan feeds our family of 4 (including two teenage boys with big appetites!) for the week.  

Because of our varying schedules, everyone fends for themselves for breakfast and lunch and I make dinner for us to eat together as a family.  We do our best to utilize leftovers and fresh produce right away so that nothing goes to waste!

Breakfast Options

  • Freezer Waffles
  • Oatmeal with frozen blueberries
  • Cereal
  • Eggs
  • Toast
  • Greek Yogurt

Fruit options: clementines, bananas, grapefruit

Lunch Options

  • Macaroni and Cheese
  • Ramen
  • Quesadillas
  • Ham or Roast Beef and Cheese Sandwiches
  • Chicken Chili
  • Leftovers

Served with the following fruit/veggie options: apples, clementines, grapes, bell peppers, cucumbers, baby carrots, tomatoes, spinach

Dinners for the Week

  1. Root Beer Pot Roast with Potatoes and Carrots, Dinner Rolls
  2. Chicken Enchiladas, Refried Beans, Spanish Rice, Grapes
  3. Brats, Potato Salad, Baked Beans, Steamed Corn
  4. French Dip Sandwiches, French Fries, Apple Slices
  5. Eggs, Freezer Pancakes, Cantaloupe
  6. Grilled Cheese Sandwiches, Tomato Soup, Clementines
  7. Freezer Pizza and Salad or Leftovers (if we have leftovers, we will save the pizza for another time!
